DESCRIPTION
The Pikes Peak roast, also called the heel of round, is a lean cut built for low and slow cooking. Braise it down for pull-apart roast beef, shredded tacos, or sandwiches piled high.
We dry-age it 14 days to deepen the flavor before it's hand-trimmed and packed. Grass-fed, grain-finished. No hormones, no antibiotics. Vacuum-sealed and flash-frozen the day of processing.
